For dinner Sunday night, RT and I had black bean burgers with a corn and peppers side. It was so yummy!


I used this recipe from skinny taste for the burgers. We are major avocado lovers so i almost always put avacado on any kind of burger i make. I also put a tomato slice on mine but RT hates tomato so he did not get one. All inside a whole wheat thin round.


For the side I just roasted corn on the cob, one poblano pepper, and one green bell pepper in the oven. Then I cut the corn off the cob and diced up the peppers. Mix it all together and serve.
