A Weekend Review
Saturday, after my sister came and got all the little ones .. I went in to work for a couple of hours and then spent the afternoon like this ..
No she is not spoiled!! Whatever would make you think that?!?
That night RT and I went out to celebrate with our friend Ben. He graduated with his masters that day and we were so excited to get to be a part of that incredible accomplishment with him!!

Lazy Morning

My wardrobe today was one of minimal effort. I got home from smart barre and was pretty tired so I applied minimal makeup .. threw on these awesome comfy pants that I got in a corner store in greece .. With a black blouse and strappy heels.
It was more of a be lazy with RT, the dogs, a cup of strong coffee and some breakfast kind of morning than a strategically plan my makeup and outfit kind of morning. You know what I mean right?!? I'm not the only one who does this am I?? Even so .. that's just how it is.

Meatballs and Fried Rice
For dinner last night I made asian turkey meatballs and edamame fried rice and it was seriously delicious! Follow the links to the recipes on the skinny taste website and while you are there you should peruse the rest of her recipes because i have made several and they have all been really yummy.
I am the type of cook who follows a recipe. I can tweak to the liking of my family but I like to browse websites and magazines for new recipes and cook from them. Because of this, I do not cook the same things over and over. When people learn that I like to cook, inevitably they want to know what is my favorite thing to make. That is such a hard question for me because I, unlike most, do not have a arsenal of go to recipes. I am more of a "yea that looks good lets try it" kind of cook.
Anyway, if you are trying to decide what to make at your house this week .. I highly recommend these turkey meatballs served on a bed of fried rice. A glass of red wine never hurts either ;)

Coffee Fail

Most mornings, RT takes the pictures for my blog {thanks hunny!} right before I get in the car to head to work. Yesterday morning was no different .. I got all my stuff and my little chi chi put in the car .. we took pictures .. I got in the car to drive to work AND spilled scalding hot coffee all over me. FAIL!!
I had to rush back inside. Change clothes. Text my boss that I would be late because I am clearly a clutz. RT put more coffee in a to go cup and I left. When I got to work, I spilled the coffee AGAIN. Not kidding people!! At least it was on the car and not me that time. I took it as a sign that I was not meant to have my last cup of coffee that day and I left what remained in the mug in the car.

Kidmia
Last night we went to a fundraiser for an organization called Kidmia. My brother-in-law's sister and her husband started the process a couple of years ago to adopt a baby girl from Rawanda. Soon after the process began, international adoptions in Rawanda got temporarily put on hold so Amie and David switched their adoption to Ethiopia. Becoming more familiar with the conditions of the country and the number of orphans {more than five million} Amie and David felt the Lord was calling them to get more involved. They found out about the organization Kidmia and now serve diligently for them. It was a great night and I hope they were able to raise a significant amount of money to give back because Kidmia is doing great things in Ethiopia.
